Potion seller was not only virtuous but also business-savvy.

The knight was wrong. He was like a male Karen who came in and demanded a thing that was unsafe for consumption then threw a fit at the merchant when he got told that the potions would literally kill him, and the seller would have lost his business for selling a product that killed someone.

He was doing it for the traveler's own good.

If the knight was so mentally weak as to not be able to handle a bit of harsh rejection, he sure isn't strong enough for his potions

Ok but he was a new knight who couldn't handle the kinds of potions the seller was offering. It's like just finishing training and heading to the max level weapons store, you just aren't ready for it. The knight was too brash and would have killed himself with such powerful potions.

The knight for not asking "If I can't have your strongest potions, do you have any potions I *can* buy?" He was so fixated on the idea of only having the strongest - whatever that means in this context - that he didn't ask for the potions that would be most appropriate.

Potion seller was not in the right to judge the knight. He sells the potions, obviously, so why not sell them to him? Imagine being 21 with ID on you but the liquor store won't sell you anything because they assume you can't handle your liquor. If you come in stumbling drunk, sure, don't sell alcohol to him. But there's nothing that indicated the knight's weakness to his potions that I can tell.

Clearly the shop is only for the strongest, so the Potion Seller sells only the strongest potions. The Knight is clearly of the weakest, so naturally he could not handle any potion in the shop, let alone the Seller's strongest potions. It would irresponsible as a potion seller to sell a potion to someone who is not capable of handling it.
