I'm just disappointed the battle where you fight all 3 of them is not part of the "main quest".

Idk man I thought it was cool but it took me like 20 minutes to beat, when I realized most attacks could be dodged by just standing still that shit rubbed me the wrong way. Everyone hyped this boss up so when I beat it and found out that wasn't even the right way to go I lost motivation to continue

That's objectively false though.
There's literally only one attack you can dodge by standing still and that's when the saws are launched in one of their 3 possible trajectories.
For their physical attacks they either sweep the entire arena from corner to corner (you have to jump) or teleport directly above you forcing you to dodge.

butting in here but I think people mix up 'hard' and 'challenging' and only see 'hard' games as ones that make themselves unfair. DS is challening, but it's a learnable and overcomable challenge you can master like any good game. For a lot of people 'hard' and 'challenging' or 'difficult' etc are all interchangable for this, but for others they can only see 'hard' or 'difficult' as something impossible to master or properly overcome like old dungeon crawlers relying on RNG and heavy trail-and-error minmaxing

That kind of thing is part of the charm of metroidvanias though, specially when one of HK's strong points is how open the map is for everyone to end up with different routes in their first playthroughs.
