Because it's fun to experience the world from an ordinary perspective. The Hero's journey is the ordinary into the unknown, or extraordinary. Even games that are majority human do this. For example the Witcher 1 has Geralt starting out as an outsider, and with amnesia, and the game world benefits greatly from this.

Almost all fantasy worlds are unknown to us as players before we start, so picking an "ancient inhabitant" creates a disconnect, at least for me. I strongly believe part of the reason Morrowind is so great is because it's so strange. You are an outsider, discovering this completely alien place, people, and culture. The game even does it twice over, when you go to the Ashlanders.

Playing as an elf or something just makes you something unknown, in an unknown world that treats you as you already were familiar with it.

Remember that the hero of Arthurian legend is Arthur, not Merlin, and while Arthur is definitely not any ordinary man, he is not so removed as Merlin is.

Stories are meant to be experienced with good protagonists, not literally overpowered knife ears.

But truth is, people who play as non humans don't care about the story, they just do it because they are trans and they wish they were beautiful elven women IRL, they will never be one though.

I tend to pick the best looking race, often that's human because the other races either look like shit or are just humans with extra bits glued on.

Unless there's some actually interesting races, there's no fucking reason to not just go human.

I tend to pick humans because I always worry that certain content will be locked off from certain races and in all likelihood humans will have the most polished stuff because the majority of people play as them.
