I play a lot of Unreal world and that is just a big fishing trip after you get set up.
Dark Cloud 2 has a whole game in a game about Fishing.
You can compete with your fishes both in size and in racing them against others.
Its fun as hell how too.
Ocarina of Time was my introduction to comfy fishing mini-games.
Runescape USED to be comfy. But now no one talks any more when they fish
RDR2 has the comfiest fishing
black desert looks nice, had fishing but it's not that comfy, it's possibly the worst part of the BDO grind

I really liked the fishing bit in Graqveyard keeper, shame the game fucking goes nowhere
It does, the game aged pretty well and the music is some of the best in MMOs

I had all the expansions years ago, played through the whole campaign as a warden, really enjoyed it.

Cold Steel series
FF15 (would be better of Gladios would not stop backseating ALL THE TIME and having to rebuy the lines). Also not a great game but the fishing is realistic.

Runescape is the obvious classic, but FFXIV has a pretty good system for jobs by offering questlines and leveling although the fishing itself is pretty mindless.
I find the main campaign in FFXIV to be pretty boring for huge chunks, but it's nice that you can just go of on your own way and become a cook or carpenter to make extra money and chill out.
