It mostly worked and I didn't mind the slow windup animations, but the input delay did feel like overkill.

It's a design choice. Turning instantly on a dime feels weightless and low budget especially at stand still or walking speed. If OP really wanted to show delay he show something else like Arthur shooting or Link firing arrows or swinging his sword. This webm is just PC circlejerk bait.

Yes I turn around at normal speed. I don't instantly make the front of my body appear where my back was in .01 seconds like some games do.

Obviously there is no 20ms input delay in real life, but you also don't instantly go from nothing to a brisk jog as you leave the bathroom from taking a piss. If you got up right now to put on shoes/etc, walk to your nearest corner store, buy a snack, and walk back it would take 10 times as long as doing something similar in a typical game. Most things people do in day-to-day life are pretty slow.
