Saint Denis isn't even close to half the game, only one chapter takes place in it. Most of RDR2 takes place in forested areas and plains, with some time in the snow, swamp, and tropical island climate sprinkled in.
Not being in a desert was also a good chance of pace seeing as 2/3 of RDR was set in the desert. I remember when I was younger West Elizabeth was my favorite area simply because it finally broke up the tone.

The animations look rough as fuck, the horses feel more like controlling some weird car than an actual horse and the entire map is completely covered in ledges and cliffs to cover up how small it actually is.

I like how both games serve as great explorations and encapsulations of the genre as a whole.
The first game's three acts are pretty clearly representative of three distinct eras or sub-genres that left their marks on the Western. The first act is deliberately evocative of the classic American Western which were popular from the 1920s to the 1950s. It had all the stock characters you'd expect from one of these films - the snake oil salesman, the grave robber, the ageing sheriff, the cattle ranchers etc.
The second act in Mexico is more evocative of the Spaghetti Westerns. It's a little darker in tone compared to the first act - the morality of everything is a little murkier. There are no more distinct white hats or black hats - rather every character seems to be self-serving to some degree.
The third act in Blackwater represents the Revisionist Western.It's here that the game's central theme - that being the death of the Wild West - is most clearly conveyed. Like a lot of revisionist westerns, this act also seeks to interrogate and critique issues like manifest destiny and race relations with Native Americans - issues which were either ignored or incuriously celebrated in the classic Westerns.
Red Dead Redemption 2 then can only be described as an epic Western, one that critiques this idea of the 'noble' gang of outlaws by chronicling the downfall of Dutch's gang - which coincides with the demise of the Wild West itself.
