I think Bloodborne has a good run up until Rom, if a bit cramped.
DS2 and 3 are definitely less carefully put together

Reminder that DS3 is a refined version of DS1 that instead of sacrificing level design for meme "interconnectivity" it creates sprawling and complex enviroments that have multiple actually useful passageways and shortcuts. This creates the feeling of large non linear enviroments without being constrained in gameplay by gimped level design

Bosses have always been the least interesting part of these games for me. They are great for closing out the bigger sections of the game, but they really started overdoing it. The exploration is by far the strongest asset of the series, not the combat. And I think that the combat is better explored within the context of fighting balanced groups of enemies rather than in bosses.
People loved Ringed City even though it is shitty set pieces after set pieces with annoying gimmicks just because it had good bosses, while Ashes of Ariandel is seem as the lesser DLC, even though it has a much more cohesive design with great enemy encounters. It is clear to me that people tend to judge Souls content by bosses alone.

Demon's > Dark 1 > Dark 2 > Bloodborne > Dark 3

Bloodborne is good but Dark 3 is not.
Sekiro is equal with Demon's but is different enough that comparing it with them is dumb.
