N64 managed to create more polygons on screen but most of them were single colored pieces, while PS1 even though everything looks more "blocky" you could put different textures over them, which with some work could make the game look prettier

Why is Saturn version better and how bad is the emulation?
It's just a couple of filters, not a big deal.

Saturn version has more characters and more areas of the castle. The only negative is that the graphics are a little worse in some areas because the porting team was newbies mostly.

The graphics aren't just worse, the performance is dogshit. For a 2D game of that era it's embarrassing.

Because 64 bit graphics are only a half measure improvement over 32 bit graphics. It's the same reason why 720p hardly feels like an upgrade over 480 or even 240p despite technically being HD.

no blur filter added after rendering. n64 looks a lot better with deblur, especially on emulators and on higher resolutions.
