Because while the PS and Xbox are essentially the same thing in 2 different cases the Switch simply isn’t powerful enough to run games like that at the same level. Developers probably have to essentially remake a good chunk of the game to make it run on switch for an audience that may not even be as into FPS

Because the Switch is an oversized 7th gen handheld pretending to be an 8th gen console with a docking feature. It lacks the power to handle current gen games without sacrificing details, framerates, resolution, or all of the above in cases like DOOM and Wolfenstein. On top of that, the only shit that actually sells on the Switch are indies, ports, and Nintendo's first party offerings. Given that it's sold over 60 million units in 3 years, that's all it really needs apparently.
Why can't Nintendo just make a powerful console? If they really HAVE to be unique or they won't sell consoles, how come Sony seems to do just fine? I mean they've sold like 110M+ so it seems not being unique doesn't matter all that much.

Since the Gamecube they've stopped attempting to push technical boundaries and are just settling for the bare minimum that people will put up with and this board will suck their dick to oblivion for it.
Because making an xbox port of a PS4 game is trivially easy. Modern engines let you pick a different build target, hit build, and it will spit out a more or less 100% working game. You do a quick regression test and you're good. One developer and two QA guys could do it in a couple weeks. Making a Switch port, however, would also involve having to make new assets with reduced fidelity to deal with the reduced resources of the Switch. Considering people only buy first party games or indie games on the Switch, it's not really worth the effort for almost no additional sales.

Dark Souls is a PS3 game and always had mediocre graphics.
The switch isn't powerful enough to handle most games without a ground up build/rebuild. And even then you'll end up with a mobile game with a rebuild.
No reason to spend the time and resources on porting halo to the switch just for it to end up looking like halo one on the original Xbox with shitter textures.
They are so far into upgrading the quake 3 engine that it practically isn't the same anymore
