I think this sort of design is demanded because it's very easy to just pump out filler episodes and animate things when your character is composed of a few shapes and nothing to specifically pay attention to, though Gravity Falls and Gumball were entertaining

We always had character design trends, not just nowadays. I would argue it was even worse back then. In the 80s, almost every cartoon looked the same, whereas cartoons today look quite different, apart from the somewhat similar face designs obviously. Gumball, Gravity Falls and Regular Show look nothing like each other
