if it wasn't intended Nintendo LITERALLY cannot conceive of it being fun. The only happy accidents are ones that happen during development; if players discover something unintended and love it to death it gets removed no matter what in the next one.
i think the only exception to this is animation cancelling being an unintended glitch in street fighter II, which then became a genre staple

The "infinite 1ups on the stairs" trick was discovered by players, and the developers were unaware of it until someone wrote to them. The trick was then intentionally implemented in future games. NSMBW has a hint video that shows it off, and Super Paper Mario parodies it by having you lose points if you attempt it.
They do like their tricks, sometimes.
The Double Cherry was done by mistake but it was interesting so they decided to work it into the game as well as expand on its more puzzle oriented nature in Captain Toad.
