Emulation would be a better option if there weren't, to this day, still issues with it as outlined on the wiki. Sunshine and Galaxy should be virtually flawless in comparison in this collection. If they turn out to be at least as buggy as emulating then would be, then you can mention it as a viable option.

After March 31st 2021, both the physical and digital version of 3D All-Stars will be no longer available, and after that point in time, Super Mario 64, Super Mario Sunshine, and Super Mario Galaxy will all be available as standalone games on the eShop for $30 each (HD fee over Wii U's $20 for Galaxy), as well as Super Mario Galaxy 2 being a standalone $30 game, which can also be added to the collection as DLC for only $20 if you own it

They probably just won't port Galaxy 2. It's a weird and dumb decision that would cost them potential easy money but that's exactly the kind of thing Nintendo does.
