6 was the best one in my opinion. The dynamic boards added an element of strategy that made for the perfect balance of luck and skill. Laying out trap spaces is always great too. Whenever I play with my friends we always end up gravitating to laying traps in one corridor of the board leading to a fuck you alley being created and it's always fun when the star respawns in what we call "fuck you alley." This isn't to disparage any of the other Mario Parties, I maintain that the nunbered titles up to 8 and DS are all a great time with friends but for me, it's 6.

They need to go back to what the first six Mario Parties did, have Mario and friends create a new world to adventure in like the gods they are. Start with just the main six and add more characters as the story develops, like how Daisy and Waluigi were unlocked in 3.
