Food is hard, you'd need a fridge and a way to reliably power it but I found basic living in a van comfy. Nuts, couscous, oatmeal, etc, got eggs often enough in towns. There's lots of long shelf life food you can significantly improve with herds, spices, dried fruit, etc. I just miss baking pastries and such: you never miss butter more than a week without thinking about an apple pie or soda bread.
If you live near anywhere civilised, you'll have a good supply of week-lasting food. Just get a good ice box thing for some more perishable items.

I've been obsessed with small homes lately, especially with the absurd cost of living in Massachusetts. There are so many neighborhoods just minutes away from the city that have huge plots of land and houses with 4-5 bedrooms, garages, finished basements, etc.
I once rented an air bnb that was just a little cabin with a kitchen, bedroom, and bathroom. It had plumbing and a washer/dryer and everything, but it was small enough that the hosts could just have the cabin in their front yard.
I've been thinking about a "trailer home" that could be fixed up to something really comfy (like OP's pic) but I'm not confident enough in my DIY skills yet.
