To understand JRPGs, you must first understand what RPG means within the context of videogames

Video game genres are named for their mechanics, and thus a video game RPG is a game which borrows mechanics from pen and paper RPGs.
Namely, that success and failure for actions is determined by your character's "stat sheet" and this character can be trained or otherwise "leveled up" to become better at various actions.
This is different from "Action" games where the player's ability to be precise or quick with the controller is what determines success and failure
Of course there are also Action RPGs, a blending of the two genres in which both those factors are important to success

Secondly, you must understand what it means to be "Japanese"
That is, to put it bluntly, it's made in Japan.

Witcher 3 is a japanese RPG. Much like other JRPGs, it is rigid, linear, text heavy, has dating-sim elements, and auto-allocates stats on level. Just like other JRPGS there is only ever a single solution to problems dictated by the dev, so there is no WRPG style of gameplay where you have the freedom to come up with your own solution. Witcher 3 is a JRPG.

Because the origin of the term "JRPG" is similar to the origin of the term "Metroidvania"
Which is some butthurt individual made up a category so they could say "WRPG" instead of "game I like" and "JRPG" instead of "game I don't like" but then people who actually liked the games they had put in "JRPG" category started using it fondly instead of as a derogatory.

RPG never had a good definition it describes a fuckton of different games with different selling points. When someone says "I like RPG games" you can't actually tell what games they like.

RPGs need a split between stat/gear driven games and games with significantly branching stories. I am so fucking tired of everything being an RPG

that's not how either typical japanese or western rpgs work and you don't understand what linearity/openness means in either cases

western RPGs typically don't include "more solutions" within their typically more options
Their whole point is that every outcome should be "viable", which sounds cool but this also means that nothing has real "solutions" or strategy/depth behind them, instead the games play out more like "choose your adventure" books
This goes for typical dialogue options, and also for your typical character stat allocation. For example you decide to make a "hacker build", you do this because that's the outcome you "want to see" and not because this decision of yours was strategical.

the actual depth/strategy in typical western rpgs is very limited and it's very much the exact same thing typical Japanese rpgs have. The more actual strategy you require the less you will call them simply rpgs and the more you will call them tactical rpgs

tldr: more options don't mean more "solutions"
