Probably Sunshine first. I played 64 a few weeks ago, and while I do love Galaxy I haven't played Sunshine in years and love it too.
I bought two. One for me and one as a Christmas present for my brother.

From the preview it looks like SM64 has higher resolution textures, so the best part of this is that they can be ripped and implemented in the open source version.

I'm gonna play Sunshine first since I've never played it. After I'll flip a coin for the other two as I haven't played either in ages.
I genuinely believe 3D Mario games are the most replayable games in the world and 3D All Stars would be my choice if I was to only be allowed to bring one video game with me to a deserted island.
I'm going to most likely play in release order since I hardly even remember playing Galaxy so I would like for that to be the big surprise and climax for me
The joke is that the regular copies ended up being worth more than the Limited Editions due to Microsoft overproducing them. Scalpers were definitely on suicide watch when desperately they tried to sell them off for any kind of profit.
A more serious example of out-of-print games being worth a fortune would be something like Fire Emblem: Path of Radiance. Good luck finding a used copy cheaper than $100USD.

I wouldn't recommend any1 who is new to these Mario games play them using new controller-types. Galaxy you could play through with whatever though. I'm curious if Nintendo would allow you to change shaking the Wiimote in Galaxy for a button press instead.

I'm playing Sunshine first since it's my favorite and I haven't played it in years. My gf has also never played it. I'll play Galaxy next and 64 last. Already replayed 64 when the PC port was ported for the Switch
