Genuinely appreciated all the small shit in The Witcher 3.

Pretty much everyone knows it, but Spec Ops: The Line changes shit over time to reflect your character's dwindling mental state.

RDR2 does it pretty well. The changes just sort of creep up on you at first, but then it gets really bad and Arthur is just pitiful to look at. I didn't see any discrete points in the story where the textures get changed either; the logical assumption is they're at the start/end of chapters but it was really subtle
unfortunately the driving skills don't progress at all

In Max Payne 3 he's basically constantly changing how he looks. Besides the obvious shaved head and beard, he has a bunch of different outfits, outfit damage, and injuries depending on the point in the story:

I always liked the detail of Gordon growing stubble in later promotional art. It makes sense since all the events from Half-Life 1 through to the Half-Life 2 episodes happen in real-time (from Gordon's perspective) so he'd have no chance to rest and shave.
No chance to use a toilet either but I suppose the suit can deal with that.
Danganronpa Ultra Despair Girls, at a certain point the protagonist gives an autistic, stumbling inspiring speech, and after that her entire set of animations changes from scared and nervous to confident and chad, it's great
