It attracted a swarm of fans that were hungry for more content through being unique, creative and filled with great but unexplored settings, concepts and characters since it's a fairly short game. Fans got so desesperated to get New content they made content themlselves, including AUs. There's also the chance i am just overthinking and it's pure luck.

Underlust was my most hated. I don't get why turn the character into dickhungry sluts is a good idea, and adding sub-plots about trauma and dealing with serious subjects to make up for It made it worse. I don't feel like that fits the game and there are better ways of dealing with those things.

You nailed it pretty much. Undertale is like a 6-10 hour game that gets 3 playthroughs at most but is regarded by many of its fans as one of the best games of all time. Toby Fox is probably going to release Deltarune 6-8 years after Undertale, which is abysmal in terms of quantity of content.

On paper it's a great way for people's creativity and interests and be expressed via these AUs and helps them get better at say writing or drawing. And this is true to a degree in practice.
But the Undertale Fandom is still the Undertale Fandom and they've already found ways to make creativity and expressing yourself look horrid.
