Joining the covenant that has aesthetics that most closely match your existing class aesthetics is the basic bitch option. Especially for Death Knight where the class was forced onto your character after they were slaughtered and enslaved by the Scourge.
For RP purposes there's plenty of reasons why your character's individual personality could align with the ideologies of any covenant.
