It's very possible that there never was any dithering actually implemented into the game, and what appears to be dithering is just a result of a low resolution analog signal being rendered on a crt.

Since the switch renders the game at 720 and sends the signal through HDMI, there aren't any visual quirks like this that the devs might have relied on for the game's presentation.

Believe what you will, but the large blocky pixels composing the luma's eyes and white sparkles combined with general blur of the wii image which is evident in the luma's shape and large yellow sparkles is proof enough that what you perceive to be dithering is likely nothing more than the result of a blurry low-res image.

Of course, I'm not the kind of person who would refuse to admit if I was wrong, so if you have definite proof of dithering elsewhere in the game, feel free to present it.
