Usually a 50/50 split. Commit to a theme or a concept, then make the strongest build I can in those parameters. Unless it’s a first play through, then I’m almost always /qual just to check out as many weapons as I can

I prefer what I did on my first run in dark souls 3
I went for a dex/int build that allowed me to do almost any playstyle I want while still not being super common. I can use the following effectively in pvp and pve (ng5+ currently on soul level 124)
Any dex weapon I can put a sharp gem on and give it crystal infusion for huge damage. A greatsword with the greatsword of judgement or MLG. I can use a scythe (friede's scythe). I can use a dagger (aquamarine dagger). I can use the crescent moon sword. My favourite is the immolation tinder. It is a catalyst that doubles as a halberd. I kill people all the time in pvp because it's not a common weapon. I'll shoot a soul spear and people will roll through it, expecting to attack instantly. But I will immediately hit them with the halberd instead. It also has the third longest reach in the game, often catching people off guard. You can also equip scholar's candlestick in the offhand for the 10% extra damage. This is nicely coupled with an aquamarine dagger as secondary.
All in all, the gist of the build is that I never feel limited into one category, yet there's always a distinct theme.

For DaS1, I would make tryhard builds at first. But then I realized PvP is complete shit, and made various themed builds for summoned coop. So i'd come in as cool archer guy and and show off my archery build. Or a silver knight or something. All twinked out and optimized of course.
DaS3 is trash of course, so it's no fun playing builds in that game.

if I'm going to be pvping a lot I try to go for themed builds because over time its more fun to adapt and play in a unique way than just leaning on the most OP shit for easy kills over and over, its not like there is really any point to getting kills so you may as well have fun and make a memorable encounter for whoever you're invading

Why the fuck would I not do both? The process of getting the build running is the most fun for me, and I'm sure I'm not alone. After I get it geared and up to level and fuck around with pvp/ng+ for a bit I move on to the next one. They're not even that mutually exclusive. Is there any particular reason my faithful strong boy with a giant mace in his hands and lightning in his heart wouldn't carry around a short sword to mix-up niggers who insist on nothing but rolling?

I usually just pick a weapon to do a playthrough and do nothing but level endurance and the damage stats for that weapon. In dark souls 1 every time I play through the game I do it like that but I also wear no armor and use the ninja flip ring with base health. It makes for a fun playthrough every time.
I find it much more fun when I encounter a themed build. The standard try-hard builds have became so stale and tiresome.

First playthrough I lean towards the optimal builds. Then in subsequent plays I choose weapons, armor, magic, for a thematic purpose, but I don't give the character a backstory or anything. Souls games may be called rpgs but I don't feel they really lend themselves to role play
