Pacing is bad- >This is a 15 hour game, stretched out into 30 hours. Boring fetch and kill quests, and drawn out sections involving fighting ghosts in the train graveyard, and finding a locket for some faggot, stop all forward momentum. Square said they were 'expanding' Midgar. This was a lie.
Level design is bad- >Having an occasional hub where you can do fetch quests, doesn't change the fact that this is just another hallway simulator. Dungeons are padded out with stupid shit like fixing sun lamps.
Character animations and dialogue are bad- >Anime style, exaggerated character mannerisms don't work in a game that uses photorealistic character models. It feels awkward and unnatural. The dialogue is the usual Square-Enix word vomit nonsense about fate and destiny.
Story is bad- >We thought we were getting a remake, only to be bait-switched and find out it's actually a sequel involving time traveling ghosts trying to preserve the timeline...or something stupid like that. The mystery around Sephiroth is killed by having him shoved in your face every 5 minutes. Iconic scenes from the original, like the dropping of the plate, and the blood trail in Shinra HQ are utterly ruined. And it all culminates in a garbage Kingdom Hearts style finale.
Everything else bad- >Low quality textures and NPC models. Audio mixing is fucked up, causing the music to drown out the dialogue. Forced slow walking. Classic mode is locked on easy. I could go on.
These are the many reasons why FFVII:Remake is a terrible game. Now I challenge anyone to give some reasons why you think it's good other than "I LiKe To FaP tO TiFa!!".

This is deliberate, in the original turn based game, enemies attack you and leave you no opportunity to dodge. The remake gives you way more defensive options, but is still designed with the expectation that you won't be able to flawlessly avoid damage and will still have to use the ATB system to heal and use tactical abilities/party member switching effectively in order to play well. The combat is mostly as good as could be expected given that it's based around a party ATB system where the player's decisions are what matters and I'm glad it commits to that, it just needs tweaking.

They ruined Sephiroth, for starters. They had to keep reminding you that Sephiroth made by SquareEnix and Nomura was in the game, at every odd hour, you had to be reminded about this fact.
In my head I was picturing how they were gonna do the Shinra HQ massacre with generation of graphical power. Just thinking about the ominous cell release with nothing but bodies and blood lying around the building, floor by floor, leading up to the Shinra President's suite. You walk and see him impaled, see the back of what should be a dead man, but it was Sephiroth, and then having to deal with the fallout. Just a surreal moment, that's all I was thinking about. They could've captured this.
Instead you get whacky JENOVA fight out of fucking nowhere. Sephiroth just floating outside the building like it's a Simpsons gig. They crammed as much as they could, even if it made no sense, because why the fuck not. How could anyone eat up all these changes and think it was a good game? The fucking overworld theme of FF7 plays in the Midgar slums, as opposed to after the Midgar escape. All the pent up emotions you've had through Midgar get unleashed by the triumphant overworld theme relaxing you as you leave the ongrail confines of the tutorial act of FF7. FF7 Remake just dumps that overworld theme like it doesn't give a fuck.
Soulless remake. Absolutely hate it. Fuck the zoomers who bought it and fuck the retarded boomers who think these artistic changes are legit. Watch the Midgar Zolom that was supposed to be impaled by Sephiroth letting you know the drastic differences in power between you and him be alive and in Episode 2, just to do a quick time event dodge sequence before you enter the caves. And yes, I know it's Sephiroth controlling Jenova's body parts masquerading as himself to make them think he's alive. You don't have to remind me, it's why Sephiroth shouldn't had been used so much in Episode 1. You're supposed to question if he's truly alive or not.

Taking the term "Remake" further than just the game itself, but the timeline within the game, is a pretty interesting concept. So far it's intriguing, I said that I enjoyed it, doesn't mean it's good or bad. I prefer to give them the benefit of the doubt and wait for part 2 to pass judgement. I'm expecting a disaster, but who knows.

Combat was the one of the few things I liked about it, and it's still not great thanks to the camera and how it's easy for stuff in the foreground to obscure the action. Almost everything else is objectively low quality compared to other AAA games. You can tell they desperately outsourced to Malaysia. As for the story, I didn't expect a carbon copy of the original, but that doesn't excuse the inferior storytelling. The original game doesn't require outside media to appreciate the story; it's self-contained, whereas the remake is explicitly contributing to the compilation mess. I doubt many newcomers truly grasp what it was about. Though, I'll admit the same applies to fans of the original FF7 as well
even though I spent 45 hours in midgar I didn't feel like I got to do anything or truly explore it. the only new area was jessie's house (and you didn't really get the explore, you're on a railroad the whole time, even when walking) and the only new thing I did was... darts?
I'd have loved a 45 hour midgar game if there was actual variation in what you do and see, but there wasn't, really. you can play the original and see an entire world in 45 hours, and snowboard and drive a submarine and play an RTS and fly the highwind and breed chocobos and all kinds of stuff

Cast Wind with a non-controlled character while melee attacking with your controlled character so that the enemy holds still long enough for Wind to go off. Then they're Pressured and you can rapidly build up their stagger.
If I had to guess I'd say Dark Souls has broken your brain to the point where you think you have to have magical invincibility cartwheels for an ARPG combat system to be good. The actual criticism to make of FF7R's combat system is that you have to gear up correctly for every fight ahead of time or it becomes a slog. You can't improvise on the fly and that's something I hope they improve for part 2.
Your other criticisms are a mixture of opinion and mostly correct. The under plate section was just bad, I'm not going to defend that.

I'm at Wall Market and about to see Aerith in her new outfit and I'll say this. I find myself losing interest in the game often. Sometimes I'll get the urge to play it and play it for a few hours. But then I won't come back to it for a few days. I'm just not all that compelled to keep going.
I didn't have this experience with FFXIII or FFXV. I did kind of have this experience with FFXIII-2. I rather disliked that game. Same with Type-0 HD.

it doesnt feel like the original they ruined some aspects of characters sephiroth is totally just a weirdo not scary at all but actually comes across gay for cloud tifa just is some weird anime idol at times with her stupid fucking gestures it doesnt help that the slums of midgar look like total ass the combat is alright but i wish if they were doing pseudo action (or whatever the fuck you wanna call it), they should've given cloud a bigger moveset to work with and being able to JUMP i think the music is the best part of this project and the episodic format really pisses me off too but lets not even start on the fact of the absolute bizarre timeline fuckery going on
