Windows doesn't take up 500 gigs, though I suspect the pajeets wish it would. Regardless, there's only a handful of games that offer any noticeable improvements due to being on that sort of drive. I only put multiplayer games on mine that require fast loading times so I can select a class before anyone else.

I learned Premiere in my teen years. Been video editing for over 18, and I find Vegas to be the fastest in terms of editing speed.

I've personally never had any part except a couple sticks of ram and some hard drives die, and I only change parts about every 6 years, so I can't speak to your experience with amd, I'm just pointing out that Ryzen is unequivocally better for your use case. If this was a gaming only machine intel would technically be the better choice for raw power. If you're okay with spending this much for not the absolute best machine you can get for multitasking, then do it.
