Not very. Only times I really do it is if I'm replaying a game for story or side content or something like that.
Only game I played on easy was Dragon Age: Origins. The combat was so shitty and boring that I just wanted to get it done quicker. Difficulty just means enemy hp and damage, and fights were trivial anyway.
I put the game on the hardest difficulty and then give myself infinite ammo / mana / whatever, but not health
It's fun and challenging without the cockblocking of not being able to use cool things because my autism makes me never use stuff because "it'll be needed one day" syndrome
Never use invincibility and damage hacks or other shit like that though, that's extremely gay
Basically never, but I only bother with normal mode these days. I barely care about playing games to begin with and I get bored really quickly.

only twice in my whole life. first time was age of empires 2 because I sucked at it but still wanted to play it.
then there was fuckin witcher 2. I do the tutorial and the game picks easy for me. I quit and restart to try again, game gives me easy again. fuck that stupid tutorial, what a mess. I only played the game for like 5 hours.
I typically play on just normal. I don't have anything to prove, and I don't feel like dealing with "FOR THE GAMERS" tier difficulty— which simply boils down to enemies being bullet sponges and me being made of wet toilet paper. I don't get anything out of it.
I only play strategy games and 1st person shooters, the former always on Normal and the latter always on the hardest.

I think the new God of War was the last one I put on easy because I got incredibly bored with the combat and just wanted to see the ending real quick. Mind you, I've beaten all the other ones on the highest difficulty settings. That one was just shit, and I have a pretty high tolerance for shit.

I always put the game on the least bullshit difficulty. Sometimes, but not most of the time, the hardest difficulty is usually utter bullshit. I expect some fairness out of my difficulty.
This is also why I ignore hard difficulty in games, 99% of the time they're damage sponge bullshit. Was floored when ff7r actually had a good hard mode

Easy/normal on first playthrough
If I really like a game, I'll play it on something harder. Most of the time I stick with normal or whatever offered. Easy tends to be too boring or dull overall.
I haven't put a game on easy for 10-15 years. I'm 24, if that matters.

Honestly only if the higher difficulty is pissing me off to the point I can't enjoy the game and I've spent hours trying to improve my skills to no avail.
I've found a lot of games become more fun when you throw it on easy. A lot more dumb shit that should never actually work, ends up being a viable strategy.
start out on hard, study the gameplay loop and software stability, and if I find badly designed gamplay or lots of crashed I will turn it down out of spite.

I really like how Kingdom Hearts manages its difficulty system. Hard doesn't just mean you get hit like a truck and don't deal any damage to turn every enemy into a damage sponge. Instead you and the enemies both have low health and you get some cool abilites in a different order.

the only time i can ever remember putting a game on easy is very recently with Bullets Per Minute since the only options were easy and hard, and in my experience anything above normal is always completely fucked on balance, might just be the games i play tho
decent enough game, but the good songs were in the beginning and i finished it within 2 hours and everything else was just grinding more characters, weapons and playing it on hard so i refunded it looooooooooool

this doesn't count. you beat a game on normal and then you need like 4 more playthroughs for the platinum, of course a couple of them will be on easy because fuck that noise.

if its a short game, i might play it on easy, because a second playthrough if I want to do one will be about the same amount of time (map knowledge, mechanical understanding, enemy movesets and placements)
Currently playing through the first serious sam on easy, since the game takes like 6 hours to beat.
