In terms of production. Ancel didn't know how to draw limbs back when he was a teenager and made early sketches of Rayman, so when he was making his first game, he found back those sketches and decided to work with the limbless characther we got today

In term of Lore, it's explained in Rayman Origins that polokus, god of this world was able to make all his dreams reality. But he couldn't control it, meaning that the day he got a nightmares, those became reals and decided to attack the world of Rayman.
The nymphs, responsable of the world decided to gathers lums, the energy of this world to make a super warrior, but during the ceremony, after an attack of nightmares, Betilla lost bags of lums making the super warrior incomplete.
The result is Rayman being limbless

Lemme see here, you got the lums, which make up everything. You got the bubble dreamer, a god (lower case g) who dreamed up MOST of the world into existence. This stuff is made out of protoons. The teensies are his biological children and their descendents. Gloxbox and his family represents his sense of humor. Rayman was created by the nymphs/fairies to be the guardian of the world, and he lacks arms and legs because they didn't have enough protoons for those parts. Teensies are adept at magic because they're the bubble dreamers children. Razorbeard was an alien that invaded the glade if dreams, the magician was a teensy that used his magic for evil, Andre was a lum that got changed from positive emotional energy to negative, the various minions are all bad dreams of the bubble dreamer, and I don't know what Mr. Dark's deal was. Is that about right?

There other things like how before Polokus was born, the world was flat and was fought by multiple gods. We know one of those gods are Leptys, creators of the Knareens of Rayman 3,hence why Knareens hate Teensies since they do not share the same creator
Details like how Jano is the first nightmare, but also the guardian of one of the 2 jails but we don't know about his powers or his motivations since he is himself a nightmare

The magician hating polokus because he is the one responsible of the nightmares, destroying him would result into the end of any new nightmares

There implication that big mama is the monster who killed the teensies of the lands of the living dead ect
