Okay so it's right in the midst of the Galactic Civil War. Your character is a lowly recruit working for the Empire. Maybe you're an idealist who believes in the Empire, maybe you had no where else to go in life, or maybe you just really want to kill some rebel scum. At somepoint in the game you are asked to do something pretty heinous and you get the choice to do it and advance in rank, or defect and join the Rebellion. Game would play like Rogue Squadron III with your ship as the hub between missions. Leveling would just give you better access to different weapons and starfighters.

Open world large city where you're a Jedi in hiding during the rise of the Empire. Instead of being a flashy twirly stormtrooper killing sim it's more about (social) stealth, using your lightsaber and force powers only when necessary. Blend into the background, mind trick the guard by the backdoor, use your lightsaber to cut open the door, slip in and out without being seen, convince civilians to shelter you from a patrol, that sort of thing. Interact with the world in ways besides combat. Like an immersive sim.
