Things are made to be enjoyed in context.
The roughest thing about going back to games from that era is the shit framerates that sometimes will drop into the lower teens. Visually they're mostly fine.
FF7 didn't age. It never looked good. Play better ps1 games.
I'm 30+ and I've realized most games who age like shit have bad controls and some restricted movement. Play Quake, MW2, and I would even dare to say RE4 to some degree and they'll feel right and natural from the get go. I recently played Witcher 3 again and holy shit has that game aged like milk already. It was my goty at release but the controls suck so hard now.
You can still do both those things just find and the work the same as they used to, you just do other things now that are more convenient for you.

If by aged like shit you mean they don't hold up compared to modern releases I agree. However that does not mean they aren't worth playing, many provide a unique experience that you won't find anywhere else. Unfortunately they have a harsh learning and adapting curve and require a retro gaming mindset to be fully enjoyed. With the exception of OoT, you can't just pick up the game and have fun. Even something like Mario 64 has complicated controls and wonky physics.

I'm actually playing through FF7 for the first time now and I'd argue that although the world models do look a bit goofy, the battle models still look great.
It really depends. The ones that are the roughest are the fully 3D games since they have awful frame rates going into single digits at times, and have horrendous cameras. Something like FF7 is fine because, as the detractors like to point out, it's basically FF6 but with 3D polygons and the gameplay doesn't take advantage of 3d at all.
Ocarina and Majora's mask really are kind of the only 3D games of that generation that seem to get 3D movement and camera right and even there it's a bit rough. Then there were some imitators who made some interesting titles but didn't quite reach the same levels. It's not until well into the PS2/Xbox era that people figured out how to make 3D work.
FF7 looked terrible even for its time. You had better looking shit like Mario 64 and Tomb Raider.

It looks nothing like games at the time, it's got a unique style which will always be more important than the technical-impressiveness of the graphics because that will always change and evolve. And even if it only did look good "for the time" that doesn't mean it aged, but the context around video games as a whole have.
But I think FFVII looks incredible, the pre-rendered backgrounds are so detailed and look so lived in and interesting, if you think pic related looks bad then you have AWFUL taste. The overworld models are very expressive and show off the characters' emotions perfectly. As I said, you're just a retard :)

It does. You have to play it on crt or use a good crt filter to make details to pop. It's really one of the most impressive ps1 games.
