partially they put too much effort into making an impressive tech demo that couldn't even run on a real system
They already did delay it at least once. The 360 was releasing the following year, they didn't have time to both finish the project and port it to new hardware.

I thought there was going to be 7 games for seven halos and we'd see them all before 2008-10
halo 3 was supposed to have massive multiplayer maps and water fights with boats but it was all discarded due to xbox hardware limitation
hopefully we get that in infinite so the name lives up to itself

They've mentioned in places that they always planned to do a trilogy, but I don't know if there's any truth to that. Either way, I'm sure the original ending for Halo 2 would have seen Truth dead and the Covenant finished. I'm leaning more towards a duology because I can't imagine Bungie planned on making Halo 3 game with Flood as the primary enemies.
Halo 2 was supposed to be the big Xbox Live game, they delayed it once but they weren't going to consider moving it again.
Halo 2 only happened because the first game was so successful. That whole trilogy was played by ear.
yeah basically every modern multiplayer game has taken something from halo series it's proof of how it was ahead of its time
I remember my older brother telling me me the 'leaked plot' to halo 2 and the forerunners ending up being humans that time travelled but because of the leak they had to rewrite and remake a lot of the game very quickly.
I haven't kept up with halo story since 2 and I know that isn't what happened but I always though that that plot twist would have been good

The original Halo 3 might've looked something like Halo 4. It could've been a really fitting ending to the franchise if Cortana still died.

That's half right, it's basically implied throughout the original trilogy that humans are the forerunners after they nuked themselves back to the stone age.
the reason star wars is great is he envisioned a massive plotline and then he made his movie a slice out of the entire thing

It was developed for the original Xbox and the Xbox 360 was slated to come out the next year. There was literally way to push it off another year. The situation ultimately happened because Bungie bit off WAY more than they could chew with Halo 2. Halo 2's multiplayer was basically a side project developed by a small team to placate people used to system link/LAN, with the actual Halo 2 multiplayer supposedly going to be something similar to what we got with Halo 5's warzone. The overhaul for the game engine basically made it impossible to develop or test anything for a significant duration of the project.
