Both consoles are impressive, they're more similar than you'd like to think as well. Sony's SSD isn't a meme, but it's not nearly as good as they would like you to think. SeX is better from a consumer standpoint, but Sony's 3D audio emulation is beautiful and will most likely have a small but dedicated community.
and what about SeX's more powerful GPU and slightly faster CPU? is that not useful for devs or is Sony paying you to not utilize it?

PS5 is better made than the SeX, the SeX has more raw power and that's it. their architectures are actually "very" different in their approach to exploit power.
it will all come down to optimization to have superior verions of multiplats, so far sony's devkits are based on ps4 devkits which makes it easier for devs to work on it, microsoft totally changed their devkits for the nextgen and that's why we haven't seen much or pretty much zero next gen game footage captured from the SeX. tl:dr sony will have superior multiplats for at least 2 years.

The PS5 is going to sell upwards of 200,000,000 units, kill off nintendo, microsoft, and whatever shitty chinkbot PC gaming launchers you're using. You will all be using PS NOW to stream games in the 9th gen, mark my fucking words.

I'll give you a very technical answer since I need to get back to work and can't really spend all day discussing this:
both consoles use the same Zen 2 archtecture and RDNA graphics. the xbox is going for a more 'multicore' approach with its GPU (more compute units), the ps5 is going the more 'single core' route (very high clock speeds of 2Ghz+ with less compute units). performance is about the same for standard rasterisation. expect the same for raytracing too. however, some games will absolutely benefit from one GPU over the other.
when its time to draw the game onto the screen, modern graphics frameworks like Vulkan and DX12 push the vertex data (points in 3d space where shit is, also known as the points on individual polygons) through a 'shader pipeline', which is essentially a series of mini programs that take the data given to it, transforms it in some form, and moves it onto the next shader. These shaders are usually attached to individual objects within the game world (player object, mirror object that needs to reflect something etc).
Each framework has a different order of shaders in their rendering pipelines, but the one that will be the most important when it comes to the new consoles is called the "Vertex Shader". It allows developers to write general purpose code that runs on the GPU itself and modifies individual vertices in the games world, allowing the CPU time to do other more important shit. Vertex Shaders are designed to be extremely multithreaded in mind (literally thousands of instances of the shader running at the same time, one per vertex), and will provide the biggest difference in console performance.

SeX has a way better audio solution on top of beefier GPU, CPU, faster VRAM and so on.
A great example of this is the Sea Of Thieves ocean. From the games perspective, the ocean is a giant flat plane with lots vertices slapped into it. The vertex shader attached to this flat plane is using a random number generator called a "purlin noise" function to offset each vertex's vertical position to look like waves. this happens to tens of thousands of vertices every frame to look as detailed as the SoT ocean, so the more compute units your GPU has, the faster it can calculate what the rendered position of each vertex is. Although the Series X has a slower clock speed for its GPU, it has nearly double the compute units, so it can handle creating the waves of the ocean much much faster. SoT was an absolute techincal marvel considering the realitve shitness of the Xbox ones GPU, and rare still refuses to tell the wider gamedev community what ridiculous fraction-of-a-microsecond shit they did to pulled it off.
as far as I'm concerned when it comes to what is more fun to work on, PS5 wins easily. the hardware 3d sound engine and 100% custom designed and manufactured SSD with its hardware interupts brings more 'possibilities' to the PS5, but I highly doubt it will be used to its full potential outside PlayStation Studios exclusives.
most games will run better on the PS5 due to the higher GPU clock speeds, but when it comes to technical GPU compute heavy marvels, i think the series x will come out on top. Microsoft will need to have GPU compute on their minds for every single descision, for every single game they make, in order to properly show the power of the series x. this is the only case i can think of where the series X will be able to do things the PS5 wont, or at least significantly worse at.
tl;dr: PS4 is faster for traditional "Sony-style" games where you're basically on a rollercoaster and at the mercy of the rails. As far as large, open-world technically impressive games goes, Series X handles those much, much better and it will show.

What's crazier to me is that they managed to take that tech and port it to Forzatech engine as it's in use in both Horizon 3/4 and Forza 7 and Rare's tech team says they reckon can put it in any engine MS studios is using if needed. But then MS has some crazy engineering. The Global Illumination tech in Unreal 4 was developed by Lionhead (RIP) and Epic were so impressed how they managed to both do it and shave off so much render time and performance compared to their in house solution they asked Microsoft if they could use it as the base GI for all developers.
