because game mechanics take time to design and implement and if it's not a main focus of the game they're going to keep it simple

Because they're normally tacked on. Games that use them as an extension to generic hunger/healing systems will never have a good cooking system. Games that tack them on as buffs generally don't go deep enough to make it an actual fun mechanic.

Pretty sure the reason for that is because you can't actually taste the food. You would have to roll taste buds for each NPC because even a little bit too much heat or too little or even more spices, changes the dish completely. This is why life is the best cooking system.
