Difficulty curve. The only time it's even sort of challenging is at the very start, after Death robs you blind. My first time playing SotN (I hadn't played other CV games at the time) the only boss that gave me any trouble at all was Slogra + Gaibon. Beyond a certain point the game is beyond piss easy.

just use Alucart sword and shield if you want the game to be a little difficult I guess

It's just area, corridor, area, corridor, area corridor... and the level design in those areas is mediocre most of the time.

Aria of Sorrow, Portrait of Ruin or Order of Ecclesia did it better. Almost ever classicvania is also better.

Save points are the only good way to handle saving, shut your retarded mouth.
Your issue is fixed with temp saves that suspend your session, which I admit more games really should have.
