Star Revenge is good and relatively vanilla.
SM64 Sapphire is a short hack but with excellent level design.
Last Impact is basically a SM64 2, a truly insane effort.
Super Mario 64 Land is in a similar boat, also amazing.
Kaze emanuar's mods are pretty great, mario land 64 especially had skyhigh production values & a good challenge level.

Not Mario but Banjo Kazooie: Jiggies of Time has insane production value, is stuffed beyond full of fun easter eggs, and has neat surprises around every corner especially if you're a Zelda fan. Absolutely worth a play if you like 3D platformers in general.

Star Revenge 1 hasn't aged that well, even with the redone versions. The level design is pretty lazy, with pic related being the worst offender. The hub world was peak soul though and BroDute is remaking, so there is potential.

Mario 256 looks pretty good, could beat Star World to the punch for releasing an actually good DS hack. Here's hoping there's a good analog mod in the near future. Also
