If she married Mario it would change the whole dynamic of Bowser's character. Bowser captures peach because he wants to marry her. He's not evil, just misguided and a bit stupid, as a giant turtle he doesn't understand how relationships with a human are supposed to work. If Peach is Mario's wife then he's trying to steal some dude's wife. At that point he is clearly evil which isn't what Nintendo wants him to be.
