You have to think about enemies in terms of what mechanics they bring to the table and how interesting their design is.
Vires are obviously a product of their time taking in mind this is how they look in the original Zelda. It's basically a triangle with wings, horns/ears and 4 sprites that represent multiple eyes.
It's just enough to make it look like a monster with that little resolution. It jumps around and when you kill it, 2 keeses spawn, which makes it different to deal it than the rest and represent a challenge that can escalate things in a room.
Now, when translating this design to later games it's understandable they discarded it. Design-wise there's not much going on with him beside being a basic bat-like imp with 4 eyes, and the mechanic of jumping around and becoming 2 bats when killed isn't too interesting at this point in the franchise. Also it wouldn't work too well in the 3D games because it would look kind of absurd to see 2 tiny bats pop out of the guy when you kill it after jumping around for a bit. I've checked the gameboy version of Vires and they really are not Vires at that point since they don't look at all like the original nor do the same mechanically.
Oktoroks take the cake for iconic enemy in the franchise yes.

What I love most about this is that TP has an enemy that's literally just an Octorock, but because they don't call it an Octorock TP is the only game in the series without Octorocks.

I was very surprised they included Lynels in the game. I just wish they were not damage sponges because they get kind of trivial once you learn the flurry rush and parry timings and the only thing that can kill you is you getting bored and desperate. Other than that, extremely cool retake on the enemy. Really dig how dangerous they were made to be.
