I'm still on 8GB of RAM, too. I mostly just emulate old games and occasional indie stuff anyway. I've considered bumping up the RAM, but I don't know if it would benefit me that much. I'm using an i5 from a few years ago and an RX480 anyway. Still decent hardware overall, but probably not suitable for AAA stuff for much longer.
