Final Fantasy. The only real stinkers are XIII-2, XV, and II. There are a couple of questionable ones, but you also have some of the best games ever made in there, especially if you include Tactics which is GOTYAY and solid spinoffs like WoFF and Theatrhythm.
Zelda's also a good choice, there are no bad Zelda games except the CD-I ones and even those are just stupid.

If you do ignore spinoffs, Mario is my pick. Everything is at least 6/10, but then you also have some phenomenal games like 64, the Galaxy Duology, and Odyssey to make up for the weaker links like NSMB 2 and Super Mario Land.
Dragon Quest and Kirby are also good choices.

I loved 5. Literally all I wanted from WiiU was a Fatal Frame game that used the controller as a camera and I got it. The story's the worst one in the series for sure but I play them mostly for the ambience and ghost fights, and 5 was as happy to oblige me as any other entry in the series on those fronts.

DMC is my favorite series, but it is NOT at all consistent. Like you said, 2 is not good and 4 is not finished. 3 and 5 are great. 1 is good but different from 3–5. DmC is complete trash.
