I thought fuck it I don't really want any games right now so I'll treat my gf to some csgo keys and I'll trade her the items once I opened everything. And then I pulled a marble flip knife in factory new condition. To her it's a massive deal or something because it's worth a lot of money but to me it's just a skin. Should I be more happy or something or am I missing the point? I am just happy that she is happy.

there's used to be a reputable cash for skin sites but that was canned years ago.
the best thing that could happen is that she could sell it for real money if she doesn't get scammed. otherwise, it's still real money in steam bucks.

Find a buyer who can pay you through paypal or something on one of the trading forums. Or sell it on the steam community market if you want steambucks for videogames.

the steam market is one of your options but you can also trade it for real money not steam fun bucks if you find someone who wants it, but it's easy to get scammed if you've never done this before
yes that is an option you can take for the safest way to offload it.
steam takes a 20% cut so you're left with 80% of the earnings to my knowledge but you were going to have to take that 20% cut anyways as anyone worth their salt knows not to trade things at anymore than 80%
