He doesn't want to kill the dragon, he just wanted to explore mine and craft in The End. The Dragon attacked him on sight and so Steve had to defend himself.

Well what was his motivation to capture thousands of villagers and imprison them in death camps where only a select few are allowed to survive and go through dozens of rounds of forced infections with the zombie virus and cured and even then those survivors are just moved to a normal prison where they are forced to work as merchants for all eternity. Yeah, throw a potion of weakness at them and then right click on them while holding a gold apple. They start sizzling and then become regular villagers, and afterwards their prices become insanely good because you saved their life. It used to also change which trades they offer too, but I don't think it does any more. That's why my villager Auschwitz has a zombie infection and cure chamber in addition to the expected death chamber.

I used to keep resetting them with the infection -> cure cycle until the normal price they offered was good. I don't know if that works any more after the update to villager professions.

The battle with the Ender Dragon was intended to symbolise a battle with Steve's own existential dread. He is alone in a parameterised world that allows for a great deal of possibility, but is also held back by a strict set of constraints. You might argue he is not alone as there are villagers, but they seem of a different species and can hardly be said to have any real agency. He finds himself in the world for, presumably, an indefinite period of time, forced to mine and build, explore, mine and build. What for exactly? The hell of it? To see a project through to completion until it is finished and he is need of another. What is the goal of his life? Does he need a goal? Is there a higher purpose. He defines his purpose as to travel to "The End" and defeat the most powerful enemy in the game. It gives him a goal to strive towards and focus his mind on. When he gets there, defeats the dragon and experiences "The End" however, he realises it's a bleak place with nothing that truly made the trouble worth it. He returns to the normal world and life goes on. It's a liberating realisation however. He sees now that there was no need for an end goal, as there is no true end. He goes on with a renewed sense of tranquility and humanity and chooses to exist and create within the world he finds himself in. Minecraft was a masterfully disguised exploration of existentialism and absurdism.
