They have weird/multiple moons all the time. For the sun it makes sense that it'd always appears yellow (really white) because supposedly the race's eyes are going to be adapted to make whatever light their star (or other light source) gives off appear as white.

TES elves aren't mary sues, they have strengths and weaknesses just like any other race. They live longer, but that's about it. They're not "superior" like LOTR elves.

I personally make my elves predators that desire to hunt and kill strong creatures constantly and are kept in check by all the gods, they take willing members of other species to be there servants and to actually run there civilization.
