I heard version 2 may still be at least a full year away so I guess I gotta snap out of this autism if I want to squeeze the game for all its worth.
Make sure that "-noxinput" is not one of your launch parameters (if you're using an xbox controller), and in the controls menu, you have to go to the gamepad options and change bindings there; ZL/LT is "Z-Axis" and ZR/RT is "Z-Rudder".

I used both xbox and switch controllers, I think switch's triggers work right off the bat (you might be able to bind them in the normal control menu instead of gamepad options) but it's been a while so I can't verify.
