AC2, Brotherhood, Revelation, Unity, and Origins are absurdly accurate. With Odyssey, with these stupid statues in the middle of the woods, is more fantasy, but for those mentioned they did a huge job of study.

It's not historically accurate you see Caesar get stabbed by Bayek's gf first and then Brutus and the rest join in. It takes real events and adds assassin shit to it.
Historically accurate refers to the their world Building where, like it or not, they are at the top for that. Their France or the Egypt of 50 BC is historically correct as far as possible.
Architectures, local customs (the Egyptians really slept on the roofs of their houses) ways of living.
What they then tell with their Assassins saga is a lot of bullshit, but that's another thing. And so the gameplay or their games.
