aldia is nowhere near as aggressive as nameless king is, he basically has to play perfectly against a boss with small windows for attack for 15+ minutes
The reason I summon is that I have a strong enough to autism to feel that I'm missing out of gameplay when I don't see summons and how they act and interact in the boss fights.
It's not wrong, you're just asking for an easier ride is all.

I noped right outta that as soon as I landed a point blank lightning spear for 200 damage. They were meant to be pve spells but got nerfed to shit
Besides a few DaS2 cases there is literally nothing that you'll be missing out. The bosses are not programed with multiple enemies in mind for most of the time.
Summoning lets me play through areas and bosses again without needing to start a new save
I could care less about incidentally carrying some shitters over the novelty of silently running about with someone no strings attached

magic is kind of fun at first but standing a few meters away from a guy and using heavy soul arrow whatever amount of times gets boring fast
Old demon king with 4 players is genuinely harder than facing him alone.
Dark spells exist and there are two very good faith scaling physical weapons in the game.
Summoning generates more humanity on the whole than playing solo. Healthy PvP matchmaking depends on people summoning for bosses. Otherwise, you end up in a situation where everybody is just speedrunning the game hollow and online becomes a ghost town.
Even if you know you can handle the boss, always summon players when possible.
The magic in DS3 is awesome. Get some of the interesting spells like the Pestilent Mist or Souls Stream. Or Soul Greatsword.

There are almost no practical upsides to mad phantoms, but damn are they fun
The AI fucking sucks, that's why magic and summoning makes it so easy.
Invading as a sorcerer is fun once you get the hang of it though, you need to actually think about your spells.

What should I be looking out for, gearwise?
I know there's some rings, a dagger that makes sorcery more powerful, shit like that.
My main worry is clogging up my slots so I won't have much wiggle room.
In my first playthrough I did full knight with heavy armor and a greatshield and needed 40 vitality + all three equip load increasing rings just to hit right under 70% with all my gear and don't want to do a repeat of that
Also, how much should I be leveling up endurance? I've been leveling int and leveled vigor maybe three times, and strength once

Summoning just makes the game too easy.
The difficulty doesn't scale well with additional players. Having another guy there adding damage and giving enemies another target to track that isn't you beats the shit out of the miniscule HP boost enemies get when you summon.
If the other guy is good enough, you might not need to/be able to do anything and essentially he's just playing the game for you at that point.
