Rimworld managed to get my non-game playing GF into Vidya. The graphics aren't much, but the open-ended nature of the game really can't be matched by anything. Crops have a growing season based on biome, predators and prey animals interact with the world meaningfully, the weather is dynamic, and if you get bored with vanilla there's literally thousands of working mods that add a lot to the game. It's not uncommon to play with 40 mods enabled, and the graphics help in that respect because the comparability between mods is something I've never seen work so well in any other game.
Xenonauts comes pretty close to that feel desu, only with a combat focus. Tons of mods too
