Attempt to flank it (not running in zigzags, but just circling it faster than it can turn, from far enough away that it can't just turn it's head to bite you) and... uh... maybe if you climb onto it's neck it won't know what to do and you can jab at it's eyes? IT'll probably just roll onto you and crush you though.

This is bad advice, you don't zigzag, you change direction repeatedly while gaining distance steadily.
