Steam versions + Fallout Fixt for the original but you'll probably want to go for the more purist option in the installer so you get the bug fixes like being able to get the good endings, but don't get the new content.
Restoration Project for Fallout 2 is a very cool experience although it adds a LOT of (good) cut content.
Personally I would check out the modding sections over at No Mutants Allowed. Despite whatever gay shit might happen on their forums they are the prime resource for modding for the original games. The pinned posts there tend to be comprehensive.

Seconding this, it's how I went about it.
It's a great time OP. Just know that the beginning of the first game might feel a bit like shit until you get to Vault 15 (like half an hour into the game if you're taking your time), once you get there the game takes off properly.
Don't get discouraged if the start feels sluggish.

Fallout Fixt is a restoration patch that fixes a bunch of bugs, adds children back and so forth. Though it adds some bugs as well (world map being unstable).
There's a new way to play it called Fallout Et Tu which is vanilla Fallout 1 in Fallout 2's engine. It's complete and apparently really fucking good. At least the people over at NMA finds Et Tu better than Fixt, even though Fixt has some more content. Remember to have at least 9 or 10 Agility, otherwise you're going to have a bad time.

Haven't played it, I played Fixt before I knew about Et Tu. However according to the NMA thread the motorcycle is completely optional. Same with Fallout 2's inventory restocking. So I assume you can turn it off during installation or something.

Last time I played 2 from GOG I don't think anything was censored, but that was awhile ago.

GOG has always used the European version of Fallout 1 and 2. Probably due to the fact that CD Projekt and GOG are European. In the European version children were removed due to being distasteful and a few other changes.
