What I would personally do if I were making the remake would be to have a toggle in the options for "PSX" cutscenes and "GCN" cutscenes. This way everyone is happy with the cutscenes.

MGS1 right now is best played on an emulator that honors the pixelated look, so use a CRT filter that isn't dog puke disgusting.
Sadly I can't show you a proper CRT filter since I don't have any emulator set up, so my poorly photoshopped one will have to do.
