What am I doing wrong? I apply fertilizer daily, honestly I focus on it every day more than actually playing the game, and every time it's harvest time, Sakuna says it didn't turn out well this year (I think she is referring to yield). I am only getting 10 rice out of the harvest and I max the triangle to 100% in each corner and apply shit to it every day.

Is it because I always have 0% dryness because it always rains? Is it because I have no idea how to unlock the seedling feature in that empty building?

What year are you on? You'll only get 10 for the first couple years. Maybe like 13 on the third year I think, and then it will increase exponentially after that. I don't think the rice dryness really impacts the yield, I'm not sure. But keeping all the fertilizer maxed increases weeds and pests I think, which increases diseases and stuff.

Enable vsync. I was getting 60fps on 2060 for some reason, turning on vsync made it 144fps

the combat tutorial is over by the time you're in the second zone or so
farming just has a hell of a lot going on so the tutorials for it are spread over multiple harvests, which also matches how sakuna slowly learns to not be a piece of shit

I'm on the fence on wheater or not I want to get this game. On one hand, the combat looks nice, and the rice farming seems to be on point. But on the other hand, I don't really have enough free time to really get into a game now and days. Plus I already have a HUGE backlog of games I need to finish first..(I still haven't beaten FF7: RE yet)..so yeah.

I'm not sure it there's any particular way to make them spawn, so just check all 5 spawn points every day or even half day. I haven't checked myself but I've heard that having deep water can kill your spiders so don't do that I guess.
