The only one that I seem to get for medium is what you would call skirt steak, here in Mexico you see mostly thin slices being used for other stuff which wildly varies the results among cooks, I have came across a lot of chewy meat for the same reason.

The reason well-done steaks turn out bad is because you cook them too high. A well-done steak takes a good while to do properly, lower heat and more time results in well-done, while high heat and more time means you just fucked up a steak.

It actually depends on the cut. Some are extremely nice at rare, needing only a slight char. Other cuts you want medium in order to render the fat. You never go into well done territory unless you're cooking for fucking retarded old people

It is not elitism to keep certain rules in mind when cooking, is not enforcing them, just trying to keep medium as medium and not make it so people think medium is actually rare (as the opposite also happens.)
