trust me, ignore everyone saying it's a stat you NEED to level up. base ADP, though not optimal, is good enough to dodge through every attack in the game, barring ones that just naturally have lingering hitboxes. consider investing levels in VIT instead, having good armor and shields is much more valuable.
You know how literally every other RPG in existence has a stat for evasion, well thats what that is.
Okay, I’m planning on doing a DS2 strength build but I’ve heard some weird shit like having to level dex significantly in addition to str despite not using dex weapons. Is this because of similar scaling between dex and str on most str weapons? Power stance stuff? Some other reason? And I’ve heard you should have at least 20 adaptability, but I don’t feel like sinking so many souls into that early on.

Mostly this. I wouldn't ignore it but I wouldn't max it out either. I can't remember when it stops giving you a decent investment, I stopped somewhere around 20-30 and was fine.

Never heard that about leveling dex. In DS3 refined path is good, but not in 2,you can go full str.
20 agi (not adp) is indeed recommended but not absolutely necessary
artificial difficulty points,but the work inverted, game is harder the less you have DS2 is still the best souls game though

I beat Dark Souls 2 twice without ever putting a single point in ADP cause I didn't know what it did and honestly I still thought it was pretty easy
just level strength with enough dex to hit wield requirements. ds2 is great in that even if you go mainly strength, you have access to some traditionally "dex" weapons that actually scale better with str, like the gargoyle bident (spear) and bone scythe. same thing the other way around, too (drakewing UGS is a dex-scaling ultra greatsword). side note: one of the strongest UGS, the fume UGS, has a really high 30 dex requirement for some reason.
but it tells you that you fucking retard, if you go into stats you see something like a AGL value, you push select and it mentions a easy sucession of evading attacks.

None of the games tell you what your fucking iframes or roll-tiers are. DS1 doesn't tell you that you have [X] iframes when you fastroll or that you have a "fastroll" at all you just observe this shit yourself.

leveling dex for a str build is relevant if you plan to dualwield weapons. you need STRx1.5 and DEXx1.0 for entering dualwield stance with any similar weapontype.
dex has also a miniscule multiplier for AGL which in turn gives you better evasions with the bigger multiplier for it being in ADP

and those same observations should logically carry over to 2. Except they don't due to ADP.
