After playing Monster Hunter World, I think minimalistic UI is better. Not perfect but way better than very complex.

No, their legacy is that consumers will buy a game six times that has had the same game breaking bugs for almost a decade now. Fixed in the community patched and not requiring the script extender. But re released over and over unpatched by the developers.
It's not even the worst AAA UI, Witcher 3 and God of War 2018 are both worse
i liked skyrim's ui. i think it was better than the shit but efficient UI's mods add now. i like my games to look consistent with its artstyle
oblivion has console UI and it was pure soul
honestly almost all modern games have really boring UI. DOOM also is up there with those other games.
what surprised me more was how garbage skyrim UI was after fallout 3s which was so well implemented
especially the world map, fuck me the skyrim map is so shitty and useless, in oblivion you have a paper map which is fitting, in fallout 3 it's a gps in the pip boy, makes perfect sense, but in skyrim dude let's get a full 3d view from above so the level of detail is so garbage you have no clue where to go besides the general direction
I mean not just boring, GoW2018 is just a pain to navigate, I'd usually postpone skill/item upgrades for HOURS just because I didn't wanna go in the stupid fucking menu.
W2 was just as bad if not worse (been a while) but that's not AAA I guess

MHW ui is so much more informative than Skyrim's. Every item is classified with an icon and a color, their description is loaded with info, there's a gajillion lines of whatever stats for the weapon/armors, and the UI during gameplay is also loaded of everything you want to know at a single glance. It's only simple in style, nit in content.

At least with ass creed it was understandable, since it takes place in a simulation or something. Skyrim's apple phone inventory was completely incongruous with the setting.

Bethesda main issue is not how bland the menues look but how user unfriendly they are. Oblivion, Skyrim, Fallout 3 and 4 all have endless shitty lists you have to scroll through. Fucking rubbish.
FUCKING PS1 GAMES HAD MULTIPLE FUCKING COLUMNS AT ONCE IN THEIR LIST BASED MENUES SO YOU DONT HAVE TO SCROLL FOR 5 HOURS.
This is peak soul, great artwork and satisfying sounds when you click things too.
I actually like the minimalistic look. Could use a bit more pizzazz like the Quest menu (the nordic stylized banners for each quest give the UI that extra style while retaining readability) but other than that SkyUI greatly increases usefulness, making the UI actually PC-worthy (more mouse oriented, lets you search items by typing them, more items displayed at once etc.)
100% agree, Skyrim wasn't the first to have this crap but I think it popularized it.
It's the total laziness of these developers. If you take a closer look at the picture you'll notice that this UI is designed for controller. So they can scroll down with arrows or switch menus. This is the end result of cross-platforming. They create one UI that's totally out of place for PC and is not designed for keyboard+mouse in mind.

But it's not a nightmare to look at. Everything displayed is crystal fucking clear and arranged in a readable manner, unlike Skyrim where everything in the menu is only portrayed by its name, do you have to individually read every item in your submenu to find the one you look for, whereas if shit was color-coded or/and used symbols you could reduce the searching process so much more.

I don't see the point in blaming Skyrim. It would have happened regardless, with Apple's popularity.
My grip with minimalism isn't really the lack information, but the space occupied. All the stuff in your picture could fit in 1/5th of the space it currently takes, while still retaining the style. You're so hinged on clearing space that you end up using too little, so you just spread 5 words on a fucking A2 sheet
